Creamy Chicken Enchiladas

6 (4oz each) skinless, boneless chicken breast, cut into strips
1 (4 oz) chopped green chilies

Coat a large nonstick skillet w/cooking spray and place over med-high heat. Brown chicken turning frequently. Add chilies during last 2 minutes of cooking.

1 cup light sour cream
1 can Campbell's Healthy Request Cream of Chicken Soup
1 can nonfat milk
1/2 package taco seasoning

In a medium saucepan, mix together and heat over medium-low heat

1 can (2.25 oz) sliced black olives
1 cup reduced fat shredded cheddar cheese
10 8" flour tortillas

Spread 1/2 cup of soup mixture over bottom of 9x13 baking dish

Lay 5 tortillas on a clean countertop. Put 1 TBS. soup mixture down the center of each. Follow with: 2 TBS chicken, 1 TBS cheese and 1 tsp. olives. Roll up and place in dish. Repeat with remaining 5 tortillas. Pour remaining soup mixture over tortilla rolls. Sprinkle with remaining chees. Place in a 325 degree oven for 20 minutes.

Mixed Bag Quest

Today is day one. Everyone needs to start somewhere. We all have different ideas, goals and plans, hence, mixed-bag! :) Right now, the goal is simple. Take better care of myself. I want to be here a while...maybe a long while. Recent family tragedy has made that crystal clear to me. So, this is it. I would like to see 40 pounds gone from my body no later than June of this New Year; twenty-ten (kinda rolls off the tongue,doesn't it?). I know that I can do this. I'm channeling a few angels to help me along the way (the quest part of this). Perhaps a few more of D's daughters will join me and maybe a few more than that? One can hope. I'm off to the grocery store to stock up on some healthy foods, I've printed off some nice food journals...you can check them out here http://www.blisstree.com/articles/weight-watchers-printable-food-journal-637/ I was going to buy a cool journal at Border's last night but thought to myself, "I have a binder at home, why spend 15 bucks when I can probably find one on the internet." And I did. So, wish me luck!! :)
